301 redirect to the replacement product. This transfers accumulated authority to a page that can still convert.
Redirect to the parent category if there is meaningful traffic or links. Return 410 only if there is neither. Never redirect en masse to the homepage, which Google treats as a soft 404 and which wastes every accumulated signal.
